Ingredients:
– 1 kg chicken
– 3 onions
– Fresh parsley and coriander
– 3 garlic cloves
– 1 small spoon ginger
– 1/2 preserved lemon (flesh + rind)
– 1 small spoon turmeric
– 1/2 spoon black pepper
– 1/2 spoon cumin
– 1 spoon ras el hanout
– Salt
– 3 spoons olive oil
– 1 cup water
Instructions:
1. Prepare the Base: Dice the onions, chop parsley & coriander, and grate the garlic.
2. **Season the Chicken:** Mix chicken with spices, preserved lemon, olive oil, and water.
3. Slow Cook: Place in a tajine or pot, cover, and cook on low heat for 2 hours. Check every 10 minutes — if it gets too dry, add a splash of water.
4. Serve: When chicken is tender and sauce is reduced, garnish with lemon peel and fresh herbs.
